Andalusian Condiment Soup 2 tablespoons butter of margarine 1 tablespoon olive oil 5 large onions, thinly sliced (they're better minced, so they won't slide off the spoon like noodles) 3 tablespoons all-purpose flour 1 can (about 1 pound) tomato puree 8 cups beef stock or equivalent beef bullion cubes and water 1 clove garlic (crushed or sliced very fine) 1 tablespoon red wine vinegar 1 tablespoon Worcestershire sauce 1 tablespoon sugar 1/4 teaspoon oregano leaves 1/4 teaspoon dry tarragon 1/4 teaspoon liquid hot pepper seasoning (Tabasco) 1/2 teaspoon crushed cumin seeds (don't overdo this one) salt and pepper to taste (although with the bullion, I don't think you'll need any more salt) In a 4 or 5 quart pot, heat butter and oil over medium-low heat. Add onions and cook (no lid), stirring occasionally, until golden brown and very soft (about 45 minutes). Blend flour into onions and cook, stirring until bubbly. Gradually stir in tomato puree and stock. Stir in garlic, vinegar, Worcestershire, sugar, oregano, tarragon, Tabasco, and cumin. Bring to a boil over high heat; reduce heat, cover and simmer for 30 minutes. Season to taste with salt and pepper. If made ahead, let cool; cover and refrigerate until next day. Reheat until steaming. Serve with: * meat or seafood (we've had fried kielbasa, ham, chicken, turkey, shrimp) * fresh vegetables * other garnishes like cheeses, sour cream, garbanzo beans, hard-boiled egg, croutons, etc. Make sure that as many of the additions as possible are hot or warm, so they don't chill the soup when you add them. Also make sure that the additions are spoon-sized. Dice the meat, shred the cheese, slice the veggies, etc. Place meats, vegetables, and garnishes in separate bowls, pass at the table to top individual servings. Makes about 8 servings. Note about onions: "Large" is a subjective term. If using the bulk onions (Vidalia or red), reduce the number from 5 to 3. More recipes will be added as they come in
